All the flavour, none of the faff!
One of my favourite things to order at Nando’s is the Boneless Chicken Thighs – you get all the extra flavour that you get with chicken thighs… but none of the faff of having to cut the meat off the bone!
If, like me, you like to order the Boneless Chicken Thighs at Nando’s then you are going to LOVE this easy peasy fakeaway recipe 😀
So easy to make…
These Peri Peri Boneless Chicken Thighs are so easy to make! All you need to do is mix together all of the ingredients for the simple peri peri marinade. Next, coat each boneless chicken thigh with marinade. (If you have time, marinate the chicken for 1 hour in the fridge. Otherwise, just continue with the recipe.) Finally, fry the marinated chicken thighs on a hot griddle pan for 4 minutes on each side.

No griddle pan? No problem!
If you don’t have a griddle pan, it’s not a problem. You can fry these fakeaway Nando’s Boneless Chicken Thighs in a regular frying pan or roast them in the oven. Full details for both these methods are given in the recipe card below.

What to drink with boneless chicken thighs
This Nando’s Boneless Chicken Thighs fakeaway tastes great with a zingy South African Sauvignon Blanc or an oaky South African Chardonnay. Alternatively, it also goes well with a fruity Portuguese or South African rosé.
What to do with leftover boneless chicken thighs
Got some leftover boneless chicken thighs? Not a problem! It’s delicious cold the next day… perfect for packed lunches and picnics! Simply put any leftovers in a lidded container and place in the fridge, where they will keep for up to 3 days.
Serve cold, or reheat at 180C (160C fan / gas mark 4 / 350F) for 10 minutes (or until piping hot all the way through).
Can you freeze boneless chicken thighs?
Absolutely! Once cooked and cooled, put the boneless chicken thighs into a lidded container or plastic freezer bag and place in the freezer, where it will keep for up to 1 month.
Defrost overnight in the fridge and serve cold or reheat as above.

Homemade Nando’s Boneless Chicken Thighs
Ingredients
- 2 tablespoons olive oil
- 2 teaspoons dried chilli flakes (or to taste – see Note 1)
- 4 cloves garlic crushed or grated
- Juice of 1 lime
- 2 teaspoons smoked paprika
- 2 teaspoons oregano
- ½ teaspoon salt (or to taste)
- Black pepper to taste
- 8 skinless, boneless chicken thighs (see Note 2)
Instructions
- Mix together all of the ingredients (except the chicken thighs!) in a large bowl to make the peri peri marinade.
- Place the boneless chicken thighs in the bowl of marinade, turning to coat each piece of chicken with marinade.
- Cover and marinate the chicken for 1 hour in the fridge, if you have the time. Alternatively, just continue with the recipe.
- Heat up a griddle pan (or regular frying pan) over a high heat for 1 minute. Fry the marinated chicken thighs in the griddle pan for 4 minutes on each side.
- (Alternatively, place the chicken thighs on a baking tray and roast in your oven, preheated to 220C / 200C fan / gas mark 7 / 425F, for 15 minutes, turning once.)
- Serve with all your favourite Nando’s sides!
Notes
- Adjust the heat by using more or less chilli flakes. Exact ‘hotness’ will depend on the brand of chilli flakes, but as a rough guide go for 1 teaspoon = mild, 2 teaspoons = medium, 3 teaspoons = hot, 4 teaspoons = extra hot.
- In Nando’s you get 4 chicken thighs per person, but I find that the chicken thighs you get in the supermarket tend to be bigger than the chicken thighs they serve at Nando’s – so 2 per person is plenty. But if you want to serve 4 per person, simply double the recipe!

Not a great fan of Nando’s, so not particularly interested in their recipes, HOWEVER, latest recipe for Boneless Chicken Thighs looked very interesting and, dare I say, simple. So much so that my wife decided to make the marinade and, using a couple of chicken breasts, created a meal with a jacket potato and salad. Have to admit it was really delicious and would also be perfect for BBQ’s (when the sun shines)! So thank you Easy Peasy for a great recipe (again)!
