Quick, easy and utterly delicious, this Homemade Chunky Guacamole recipe is set to knock your socks off!! Perfect for pairing with all your Mexican favourites, it’s a real crowd-pleaser and can be made in well under 10 minutes. It’s also vegetarian, vegan, dairy free and gluten free.
What’s your favourite dip? For me it’s a tough choice between hummus, salsa fresca, salsa roja and guacamole, but if you absolutely forced me to choose (what kind of meanie are you?), I think guacamole just pips it.
I actually already have a fab easy peasy guacamole recipe on my site – it’s a super simple, chuck it all in the blender and whizz type guacamole, which is AWESOME and especially brilliant if you have no time or if you are making a massive batch of guacamole.
Buuut, if I am honest, I much prefer chunky guacamole – I like the texture better and I like to taste the individual elements – I like to taste the onions, the tomatoes, the avocados, the coriander…and I like that each mouthful is just slightly different.
I will admit it; my chunky guacamole does take a teensy weensy bit more time than my fab quick and easy blender guacamole. But I promise you it is worth it for the superior flavour and texture.
And besides this homemade chunky guacamole recipe is still a quick recipe! You can easily make it in under 10 minutes – 5 if you get a wiggle on.
One little tip when making this guacamole: make sure you soak the onions in the lime juice before adding the rest of the ingredients. It makes such a difference. The onions lose their harsh edge and become sweet and delicious, and the flavour of the onions seeps into the lime juice and so flavours the whole guacamole in a delicious but subtle way…if you’ve not tried this technique with raw onions before, I really recommend you try it – it’s a game changer!
Personally, I prefer not to put chilies in my guacamole – just a personal preference. I like the freshness, the subtle flavour of the avocados and the limy zing and prefer to use my unchillified guacamole as a lovely contrasting partner to hot spicy food. Kind of like a palate cleanser.
But I know lots of people love chilli in their guacamole, so I’ve included it as an optional ingredient…feel free to make it as hot as you like, or leave it out entirely as I do.
This Homemade Chunky Guacamole is a great partner to all sorts of Mexican and Tex Mex favourites, but I would really recommend it with my Easy Chicken Mole, Mexican Pulled Pork Tacos, Pork Chilli Con Carne or Easy Homemade Chicken Fajitas.
If you prefer a vegetarian/vegan option, my chunky guacamole goes brilliantly with my Vegetable Mole or my Quick Beany Chilli.

Homemade Chunky Guacamole (Vegan)
Ingredients
- ½ red onion diced finely
- Juice of 1 lime
- 1 clove garlic crushed or grated
- ½ - 1 chilli seeds removed and diced very finely (optional)
- 2 avocados skins and stones removed
- 6 cherry tomatoes diced
- 10 g coriander (cilantro) chopped finely
- Salt and pepper to taste
Instructions
- Place the diced red onion and lime juice in a bowl and stir. Leave for 1 minute (this will take the harsh edge of the onions).
- Add the garlic (and chilli, if using) and stir again.
- Add the avocados to the bowl and mash roughly using a fork.
- Add the cherry tomatoes, most of the coriander (cilantro), plus some salt and pepper and stir everything together, taking care not to stir too much or your guacamole will lose its chunkiness.
- Taste the guacamole and if necessary add extra lime juice/salt/pepper/chilli to your liking.
- Serve topped with the remaining coriander (cilantro).

Hi Eb, I like the sound of this. I much prefer dips with texture too. Just the thought of lime-soaked onions is getting my taste buds tingling. Will be trying this recipe for sure.
xx
Eb Gargano says
Thanks Debbie – those lime soaked onions are gooood! And work so well with the rest of the flavours. I’d love to know how you get on if you try it 😀 Eb x
Monika Dabrowski says
Really like the idea of not pureeing the ingredients completely in this dip, who says dips can’t have bits in them:)
Eb Gargano says
Exactly! And some dips taste much nicer with a bit of texture to them. Eb x
Corina Blum says
I love guacamole too and think it must be one of my favourite dips -this one looks so tasty! Soaking the onion is a great idea and something I often do now with salads. x
Eb Gargano says
Thanks Corina. Guacamole is so good, isn’t it? Yes, I often soak the onions in lime juice or lemon juice for a salad too. Makes the onions taste much nicer AND makes the dressing taste nicer too, so WIN WIN! Eb x
Cat says
My family would love this. Like the texture you have left too. This screams summer with a glass of something cold to me!x
Eb Gargano says
Haha – definitely! Especially loving the sound of a glass of something cold 😀 Eb x

Love love love guacamole, in fact I could probably eat it every day! Love the colours of all the additions you have on the top – just looks so appetising. I don’t usually make mine with garlic though, will have to try your recipe out.
Eb Gargano says
Thanks, Mandy! I am so with you, I would happily eat guacamole every day, I think! In fact I probably have avocado in some form or other nearly every day, either in a smoothie or a salad or as guacamole! The garlic does work really well, you don’t really taste it (well, I don’t, but then I am something of a garlic fiend!!) but it definitely adds a lovely extra dimension. Worth a try – I’d love to know what you think!! Eb x
Angela / Only Crumbs Remain says
I love the look of your guacamole Eb – the gorgeous fresh colours look so inviting – as does the lovely chunkiness. Fab tip about using lime to take the edge off raw onions too 🙂

Eb Gargano says
Thanks Angela – yes I really love the colour of this one. My blender guacamole, whilst very quick and easy, does not look nearly so vibrant (due to all the colours being blended together). The lime/lemon on onions thing is amazing. I always do it when I am using raw onions – makes such a difference. Eb x

Here’s how much I love guac: I’m allergic to avocados and I still eat it! (I just have to be careful not to eat too much!) Salsa fresca is also at the top of my list of faves. This guacamole is vibrant and full of great, fresh flavors! I saw it over at #cookblogshare and just had to give it a try!
Eb Gargano says
Allergic to avocados??? Oh that makes me want to cry…that’s tough. Yes salsa fresca is a big fave of mine too. So zingy and fresh! Thanks so much for your lovely comment 🙂 Eb x
Lisa Pomerantz says
I have some avocados at home, waiting to become this creation of yours! TY! Now, for some crispy chips — thinking blue corn, light salt. #brillblogposts xo
Eb Gargano says
So pleased you like the recipe Lisa! How did it go? Loving the sound of those blue corn chips 😀 Eb x
Kat (The Baking Explorer) says
I love guac and your version looks so fresh and tasty!
Eb Gargano says
Thanks Kat! Guacamole is the best isn’t it? So many fab flavours in one pot 😀 Eb x
Jacqui Bellefontaine says
Oh I’m with you Eb I like my guacamole chunky, as you say nice to taste the different elements. I tend to find the smooth guacs a bit slimy in texture. I dont often add tomatoes to mine but I think I will try it for a chnage. I will see what number 1 son thinks, he worked in a Mexican resaturant in Sydney for a couple of years and is currently in Mexico on holiday, so I guess he’s the expert on Guacamole in our house.
Eb Gargano says
Thanks Jacqui 🙂 Ooooh I’d love to hear what your son has to say about this one. I did read lots of recipes when developing my version…both on the web and also reading Rick Stein’s fab Mexico book and also Thomasina Meyer’s Wahaca, which is a real favourite of mine…and like so many traditional recipes, there is definitely no one definitive version! But of course everyone will claim that their version is the best!! Eb x
Vicki Montague says
I adore guacamole. I love the tip about the onions. I never follow a recipe, but just chuck what I have in but this sounds fabulous.
Eb Gargano says
Thanks Vicki. I do quite often do the chuck it all in version of guacamole too, but it never turns out quite as good as this one! Eb x
Mel says
Guacamole is my absolute favourite when it comes to dips. I love it! It’s so versatile and easy to make. I make it exactly the same way as you do and I would have it every day if I could: in wraps, on salads, with nachos, on top of fajitas… Thanks for joining in with #FreeFromFridays.
Eb Gargano says
Oh I so agree – I would could eat guacamole every day too if I could. I do actually have avocado almost every day in one form or another – I am totally addicted to them! Not a bad addiction to have really… 😀 Eb x
Kate - gluten free alchemist says
Mr GF and myself love Guacamole and definitely prefer the chunky version….. Yours looks so fresh and lush. We have never soaked the onions…… Will have to try that. x
Eb Gargano says
Thanks Kate – oooh you have to try soaking the onions. Game changer!! Eb x
