This Mexican inspired avocado on toast recipe is a speedy but delicious twist on a classic. Mashed avocado is piled onto rye toast and topped with crumbled feta and a zingy tomato salsa. A wonderfully easy – but utterly delicious – breakfast or brunch option.
Mexican Inspired Avocado Toast
I love avocado on toast – such a delicious and wonderfully simple breakfast or brunch option. And I am always dreaming up new twists on this classic toast topping. One of my favourites is this Mexican Style Avocado Toast with Feta and Salsa. Inspired by Mexican flavours, this avo toast variation takes just 5 minutes to make and looks beautiful.
Easy to make
This Mexican Style Avocado Toast recipe is very simple to make. All you have to do is mash the avocado with lime juice, fresh coriander, salt and pepper. Then, combine cherry tomatoes, olive oil, lime juice, spring onions, salt and pepper to make a simple salsa. Finally, spread the avocado mixture onto a slice of rye toast and top with the salsa, crumbled feta and more fresh coriander.
A healthy and zingy start to the day
Not only does this Mexican Avocado Toast look pretty, it also gives you 2 of your 5 a day (a small avocado and 8 cherry tomatoes) and you are well on your way to a third portion with the spring onions, coriander and lime juice as well.
This recipe involves a whole lime (fab for your vitamin C intake) and is consequently super zingy and fresh. Just the thing to wake you up in the morning. Seriously, after I have eaten this, I am bouncing around like I’ve had 3 cups of coffee. If that’s not enough for you, why not add a little bit of chilli too?
The perfect bread for avo toast
In truth, you can use any bread you like for the ‘toast’ part of this avocado toast recipe. But my preference is rye bead – ideally rye sourdough. Use either one large slice or two smaller ones per person.

What to drink with avocado toast
If you are having this avocado toast with feta and pomegranate for breakfast, then chances are you’ll want a coffee or tea… but if you are having this for brunch or lunch, and want a wine match, I recommend a zingy zesty Sauvignon Blanc from somewhere like Chile, New Zealand or South Africa. Another good option would be a margarita!

Mexican Style Avocado Toast
Ingredients
Salsa
- 8 mixed colour cherry tomatoes quartered (all one colour is fine but doesn’t look quite so pretty!)
- Juice of ½ lime
- 1 tablespoon good quality olive oil
- Salt and pepper to taste
- 1 spring onion sliced finely
- 1 tablespoon fresh coriander chopped roughly
Avocado on toast
- 1 avocado skin and stone removed
- 1 tablespoon fresh coriander finely chopped, plus extra for garnish
- Juice of ½ lime
- Salt and pepper to taste
- 2 slices rye sourdough bread or bread of your choice
Instructions
- Place all the salsa ingredients in a bowl and mix together. Leave to macerate for a few minutes while you prepare the avocado and toast.
- Using a fork, roughly mash together the avocado, fresh coriander, the remaining lime juice, salt and pepper.
- Toast the bread.
- Spread the avocado mixture over the toast and then top with the tomato salsa.
- Crumble over the feta and scatter over a few more coriander leaves.

These little avocado topped toasts look fabulous Eb. I think I’d have these for lunch or perhaps brunch as breakfast time here, like your household , is so busy and time specific. I must admit that I don’t often eat avocado but when I do have one I often pair it with bacon in a salad, but I really love how you’ve included feta cheese (one of our favourites) and pomegranate …it really looks delicious!
I’d love to say I knew the secret for a healthy pain au chocolat but sadly I don’t……whoever works out how we can enjoy pastries at any time of day without affecting our waist line will get the knighthood which would have originally been earmarked for the aquafaba founder! 😉 ….Though in truth, as my mum says, everything in moderation is the way to go.

Oh you’re making my tummy rumble, I’d love a bit of avocado on toast right now! I started weight watchers this week to shift a few pounds and whilst I would consider avocado on toast a nice healthy option, apparently they don’t agree so I’m going to have to wait a few weeks to give these a try. The do sounds delicious though.
Sadly (as you can tell from the fact that I’ve joined weight watchers) I don’t have the secret to calorie free danish pastries. If you figure it out, let me know 🙂

Sorry Charlotte! How frustrating!! I find it amazing how conflicting diet advice is – one minute something is supposed to be the worst thing ever, the next minute it is actually a wonderfood (or vice versa!) All very confusing. Though they do all seem to agree that partries are not a health food, sadly. I am still waiting for the day they discover that actually we should all be eating more croissants 🙂

Aren’t they just? The tomato one, in particular, it is just so zingy – just the thing to wake me up in the morning! It’s interesting what you say about avocados – there is definitely a mix of opinions over them… My husband has recently been diagnosed with high cholesterol and we have been learning that it’s not just about reducing your bad cholesterol but also increasing your good cholesterol. Avocados are supposed to be full of good fats which can actually help to raise good cholesterol as well as reduce bad cholesterol, so we are munching though lots of them at the moment!
