What kind of food makes you happy? For me, I would say it’s proper comfort food – which is one of the reasons why this time of year is my favourite. After months of eating salads and cold food, I finally feel I can indulge in all my favourites again: stews, curries, tagines, mac n cheese…and comforting pies topped with wodges of creamy mashed potatoes or crisp puff pastry. But it’s not just the type of food that makes me happy, it’s just as much about the ingredients I use and the people I share it with too.

It makes me happy to spend time in the kitchen each evening knowing I am going to be sharing it with my lovely little family and it makes me happy creating big feasts at the weekend to share with friends too.

And when it comes to ingredients, it makes me happy to use the very best I can afford for my family. I try to cook from scratch most days, as then I know exactly what is going into my food, and I always try to buy the best quality ingredients that we can afford.

Yeo Valley Organic Produce

I nearly always buy organic dairy and meat as I want to be sure that the animals have been looked after in a kind and responsible way and, though I don’t buy organic veg quite as often, I am always reminded why I should when I taste them…they taste so much better than their non-organic counterparts. And as a total foodie a heart, good tasting food makes me very happy indeed! It also gives me peace of mind to know that there are fewer pesticides, no artificial colours and preservatives and no GM  ingredients in organic food. And that organic animals are always free range and farmers have to adhere to a strict code of ethics, including no routine use of antibiotics.

As you are probably aware, September is #OrganicSeptember, a time to celebrate the wonderfulness of organic food. This year I have joined up with Organic UK to help promote their ‘Organic. To celebrate #OrganicSeptember and the #FeedYourHappy Campaign I am sharing my recipe for Lentil Shepherd’s Pie…this really is the kind of comfort food I love to share with my family and which really makes me very happy indeed. It is also the kind of dish that really shows off shows off organic food to the max. I’ve used lovely organic milk, butter and a splash of cream from Yeo Valley in the mash. For the filling I’ve used organic veg, lentils, and for an extra touch of umami loveliness, some Clearspring Organic Tamari – which adds extra richness and depth to this delicious vegetarian shepherd’s pie.

Lentil Shepherd’s Pie

Easy, delicious and full of fab ingredients, this Lentil Shepherd’s Pie is comfort food at its finest and the perfect way to celebrate organic food!

Ingredients

Metric - US Customary

Shepherd’s Pie Filling

  • 25 g butter (I used Yeo Valley)
  • 1 leek sliced
  • 150 g chestnut mushrooms diced
  • 2 cloves garlic crushed or grated
  • 2 carrots diced
  • 200 g dried green lentils
  • 2 tins chopped tomatoes
  • 200 ml water
  • 6 tablespoons tamari or soy sauce (I used Clearspring tamari)

Shepherd’s Pie Topping

  • 750 g potatoes chopped into 2cm cubes
  • 25 g butter (I used Yeo Valley)
  • 100 ml milk (I used Yeo Valley whole milk)
  • 50 ml double cream (I used Yeo Valley)
  • Salt and pepper to taste
  • 50 g cheddar cheese

Instructions

  • Melt 25g butter in a large pan. Add the leeks and fry on a low heat for 3 minutes with the lid on. Add the mushrooms and garlic and turn the heat up a little. Fry for 2 more minutes with the lid off, until the mushrooms have a little colour.
  • Add the carrots, lentils, tomatoes, water and tamari and bring to the boil. Reduce the heat and simmer for 25 minutes.
  • Meanwhile place the potatoes in a pan of salted boiling water and bring back to the boil. Simmer for 15-20 minutes until the potatoes are soft.
  • Once the potatoes are simmering, preheat you oven to 220C / 200C / gas mark 7 / 425F.
  • When the potatoes are cooked, drain them and return them to the pan. Add the remaining 25g butter, plus the milk, cream, salt and pepper, and mash until soft and creamy.
  • Place the filling in a large oven proof dish and top with the creamy mash. Sprinkle over the cheese and place in your preheated oven for 15-20 minutes or until bubbling and brown on top. Serve just as it is or with extra veg, such as peas, sweetcorn or cabbage.

    I like a hot cooked dinner, it could be a cottage pie and veg or a roast dinner, but it muct have lots of fresh veg, particulary like carrots and cabbage. Always puts me in a good mood.

    Something delicious, healthy and homemade with lots of vegetables. In this weather it would be homemade french onion soup, with homemade croutons and lots of meted cheese on top. In better weather a massive salad of lots of different vegetables, topped with some feta cheese

    Love your Shepherd’s pie, looks really delicious! I actually already use Clearspring’s tamari sauce but would love to try more of their products.
    What type of food makes me happy… I think nothing can beat porridge for me. It’s so nice and comforting in the morning, delicious with cinnamon and homemade elderberry sauce.

    I’m a huge fan of lentil pie and make one at least once a week in the Winter months, I’ll have to try your recipe in the coming few weeks (though I will make it vegan), lentil pie is definitely my favourite comfort food (apart from chocolate!).

    What a great giveaway. I try to use as many organic ingredients as I can but sometimes price makes a difference. But like you always try to use organic dairy stuff.

    Shepherds pie and vegetarian variations like this are always popular in our house. I find lentils are a great way of padding out mince to mke it go further too.

    It’s getting towards soup season and porridge season, both of which make me very happy. Porridge with seeds and dried fruit is the best way to start the day and homemade vegetable soup makes a lovely lunch.

    Good wholesome homemade food. My partner is coeliac so cook in a different way now. Our favourite is shepherds pie with a sweet potato topping(as he can’t have mashed potato either), chilli con carne, homemade curry and chicken breasts with a homemade tomato & red pepper sauce. Like to make more and freeze some as well so sometimes I can have days with no cooking.

    This shepherd’s pie looks really yummy. I haven’t really cooked much with lentils but I’d definitely give it a go now with this recipe. I also like that it’s gluten free, so that’s a bonus. Thanks for sharing and I look forward to making it myself!

    This recipe is great. I have come to do it again and the only green lentils I could get requires soaking over night (the first ones didn’t)

    Is it best still to soak them for this recipe or is it not needed?

      Hmmm – good question. All the lentils I buy do not require pre-soaking, so I don’t. But if the packet says to soak first, I would follow that advice. Good to know you like the recipe! Eb 🙂
