Cauliflowers fluffy and cabbages green, strawberries sweeter than any I’ve seen… Anyone else got this on repeat in their head still? It was my kids’ harvest festival last week and I just can’t get that song out of my head! But it is an apt reminder that this time of year is such a wonderful time for cooking (and eating!)…with so much fabulous produce and weather that is really inspiring me to cook lots of hearty stews, curries, tagines and roast dinners…hoorah for autumn comfort food!

And it’s not just cooking…I’ve been a busy girl out of the kitchen too. A few weeks ago I headed to an organic farm just a few miles down the road from me in Sussex to learn all about organic dairy farming. I was totally bowled over by the care, attention and passion that goes into producing organic milk. Then last week I got to attend a rather exciting event hosted by the lovely people at Foodies100 called BlogCampOnBoard. It was a really lovely opportunity to meet up with fellow bloggers (some of whom I had never met in real life before!), learn some great blogging tips, enjoy lots of fabulous food and generally live it up for a day on a fancy cruise ship. This week my attention has turned to #NationalCurryWeek. Those of you who read my blog regularly will know I adore curry and have about a bazillion different versions on Easy Peasy Foodie (only a slight exaggeration!) so this is one of my all-time favourite weeks.

To celebrate, I have created a brand new curry recipe…with a twist! My Lamb Keema Chapati Bowls are my Indian-style take on the Fajita Bowls I keep seeing all over social media!

I am also sharing 7 of my favourite Easy Peasy Lamb Curry Recipes…all easy, tasty and family friendly – as you’d expect from me!

And if you thought I’d been a busy girl these last few weeks, it doesn’t stop just yet…I have a couple of super exciting things planned for this week too – on Friday I am heading off to Brighton to hang out with Mandy from Sneaky Veg…the plan is to go prop shopping…but I rather suspect we will spend most of our time eating and chatting!

And then Saturday is my birthday – whoop whoop!! And I am going to be spending a fabulous evening at a Brazilian Samba Extravaganza at a local restaurant. I am hoping to be inspired and share some delicious Brazilian-style dishes on Easy Peasy Foodie soon – watch this space!

 

4 Awesome Apple Recipes

Wow – I had a lot of choice this week for my theme – I could have gone for pumpkins or easy chicken dishes, spicy food or delicious vegetarian meals…but the theme that really caught my eye this week was apples!! Apples are just everywhere at the moment…and if you have an apple tree in your garden you have probably been very busy lately creating a nonstop stream of apple related dishes and may be looking for a little extra inspiration, so it seemed like the perfect choice for this week’s theme.

How gorgeous are these Cinnamon Applesauce Muffins from Corina at Searching for Spice? It is probably a good thing that I can’t reach into my computer screen and grab one or I would have eaten them all by now! Cinnamon and Apple is such a classic combination in crumbles and pies and I love how Corina has used this delicious flavour combination in cute little muffins. These would be perfect for lunchboxes, and after school snack or even breakfast. And with no big chunks of apple, they are also a great way of sneaking fruit into picky children!

Or what about turning that classic flavour combination into an Apple Cinnamon Loaf Cake? That is exactly what Donna from Bobsy’s Mum has done. The thing I most like about this cake is that it can be made with apples that are past their best. Perfect for people like me who end up with a few sad old apples left in the fruit bowl each week. Don’t throw them away – make cake!!

Were you super inspired by pudding week on GBBO a couple of weeks ago? I know I was…my mouth was watering with all those delicious steamed puddings. And clearly so was Helen from The Crazy Kitchen who has made this amazing Toffee, Apple and Pecan Steamed Pudding as a way of using up her glut of apples. This steamed pudding looks beautifully light and is covered with a gorgeous toffee sauce and lots of pecans. Yum! And with that fab toffee apple theme going on, it would make a great option for a Bonfire Night dinner!

If all of the above sound like too much effort, then why not try these lovely Simple Spicy Baked Apples from Nico at Yumsome? One of my all-time favourite puddings, baked apples are so easy peasy and very frugal…especially at this time of year when apples abound. In this recipe Nico shares her version which is inspired by childhood memories as well as flavours from Romania, where she is currently living. And she has topped it all off with the most amazing Miso Caramel Sauce, which just sounds insane! Now, where did I put my spoon…

    What a busy time you have had. I’ve never heard the song that is stuck in your head, the only songs stuck in my head are snippets from the new songs we are learning at pop choir one of which is driving me mad. anyway fabulous collection of recipes I so have to make that steamed pudding it definitely has my name on. Its also an age since i last made baked apples so I should do that too.

    What a busy bee you’ve been lovely lady! I’ll be popping over to have a read! Wonderful round up! Nico’s baked apples got me all ready for slippers, blanket and a hot cup of cocoa (and it’s not even midday yet)! I used to love them as a kid but haven’t had for ages. It’s a nice prompt for me to make them again! x

    Cauliflowers fluffy… they still sing that? My son (in his 30s now) used to sing it at his school’s harvest festival. I love the last line…

      Yup! They used to sing it in my primary school over 30 years ago…still going strong! Love that last line too – I hope you were doing jazz hands when you did the ‘Yeaaahhhh!’ They are compulsory 😉 Yeah I know, I’ve been super busy…but good busy, definitely good busy! And the cows were super cute. Thanks for the birthday wishes. Haha – not sure if I will be dancing the samba – definitely depends on how many alcoholic beverages are imbibed!! But there will be samba dancing happening – there is some sort of proper samba dancing troupe coming – so should be great fun!
