Tacos in Mexico come in soft tortillas, not hard taco shells. These Easy Beef Mince Tacos feature a delicious beef mince filling inside soft flour tortillas. Once you’ve had soft beef tacos, you won’t go back to hard ones! (Serves 4-6, depending on appetite and accompaniments.)
Place the olive oil and diced onion in a large, non-stick frying pan over a low heat and fry gently for 3 minutes until the onion is softened but not brown, stirring occasionally.
Turn the heat up to high and add the beef mince. Break up the beef mince using a spatula and stir regularly until the mince is nicely browned all over. This should take about 4 minutes.
When the mince is nicely browned, turn the heat right down low and add the cumin, chilli powder, smoked paprika, oregano, garlic, salt and pepper. Fry for 1 more minute
Stir in the tomato puree and boiling water. Turn the heat up and bring to the boil then turn the heat down low and simmer for 15 minutes.
Serve the beef mince filling directly on the table (either in the pan, or in a serving dish) together with a big pile of warm, soft tortillas and all your favourite toppings, for everyone to make up their own tacos at the table.
Notes
If you possibly can, I recommend you use chipotle chilli powder. But this recipe will still taste good with regular ordinary chilli powder from the supermarket! I recommend you use mild chilli powder in this recipe. But if you like things hot, by all means use hot chilli powder!
If you possibly can, I recommend you make homemade soft tortillas – they are infinitely better than shop bought! But you can of course use shop bought if you prefer, or if time is tight. I suggest using taco-size tortillas (typically 15-20cm diameter), but you can use fewer, larger tortillas if you prefer.
Suitable for freezing. (Freeze tortillas and beef filling separately.)
