Fruity Couscous Salad
200gcouscous(I use Tesco couscous)
250mlboiling water(see Note 1)
50gsemi-dried apricotschopped finely (I use Tesco ready to eat apricots)
25gdried cranberries
25gsultanas
50gpistachio kernels(pistachios without their shells)
10gfresh coriander (AKA cilantro)finely chopped
10gfresh mintfinely chopped
Couscous Salad Dressing
½teaspooncinnamon(See Note 2)
½teaspoonturmeric(See Note 2)
½teaspooncumin(See Note 2)
Salt and black pepper to taste(I use ½ teaspoon salt and ¼ teaspoon black pepper)
