Another month has gone by already! How is that possible? I think I’ve said this before, but I love my slot on #CookBlogShare. I get the last Tuesday of the month – which means I always get to enjoy having a little reflect back over the month.
And it’s been a busy old month (when are they ever not?) With its ups (like launching my first ever product… more of that below!) and its downs (like when my daughter broke her arm *sob*) and of course lots of blog posts!
The main action this month has been over on Productive Blogging, with not one but two new offerings! First up I announced my very first Productive Blogging LIVE event – it’s a one day conference and networking event for bloggers taking place in London on October 5th this year. There will be seminars, Q&As, goodie bags, networking, a delicious mezze feast for lunch plus coffee and cakes (all cooked by former #CookBlogShare host Mandy Mazliah from Sneaky Veg) and an after-party at Wahaca… Fancy joining us? Better get your skates on – there are only a few tickets left!!
Hot on the heels of that news, came the launch of my very first Productive Blogging course – SEO Jumpstart! SEO Jumpstart is a jargon free search engine optimisation course for bloggers. It’s all about getting your blog to perform better in search engine results – which, in turn, will bring you more traffic to your blog… and hopefully more income too! Not content with a mere two launches ?, I also managed to squeeze in a few blog posts too:
Needless to say over on Easy Peasy Foodie this month things have been a little quieter, with just one new recipe (I know – I feel like I’m letting the side down!) – but it’s a cracker: Easy Homemade Meatballs with Tomato Sauce. I also managed to squeeze in another roundup post, this time my collection of 20 Easy Peasy Pasta Recipes – perfect for busy weeknights!
3 Easy Chicken Nuggets Recipes
Well, choosing a theme for this week’s #CookBlogShare roundup was not difficult… there were an incredible THREE chicken nuggets recipes linked up to last week’s linky over on Glutarama! Which lead me to wonder if perhaps one of the days last week was national chicken nuggets day?? Quick google tells me that, no, there is no national chicken nuggets day in June – it is in fact the 13th November! So now you know 😀
The thing I love about these 3 chicken nuggets recipes is that, whilst they are all easy – they are all different: 3 different coatings AND 3 different cooking methods! Which one is your favourite?
Crispy Healthy Cornflake Chicken Nuggets
First up we have these delicious Crispy Healthy Cornflake Chicken Nuggets from Monika at Everyday Healthy Recipes. Monika coats her chicken nuggets in a mix of crushed up cornflakes and breadcrumbs before shallow frying in a little oil. I love the idea of adding cornflakes for extra crunch and I really love how much healthier these are than typical bought chicken nuggets!
Homemade Chicken Nuggets
Next, we have these lovely Homemade Chicken Nuggets from Helen at Cooking with my Kids. These chicken nuggets are made with just 4 ingredients: chicken, eggs, breadcrumbs and flour. Instead of frying her nuggets, Helen bakes them in the oven. What I love about this recipe (and all of Helen’s lovely blog) is she has step by step pictures of her kids making this recipe. I love to see kids in the kitchen, and it goes to show how easy this recipe is too!
Air Fryer Chicken Nuggets
Need to follow a gluten free diet? No worries. The final recipe in this week’s roundup are these gluten free Air Fryer Chicken Nuggets from Balvinder at Simple Gluten Free Kitchen. I love how Balvinder adds herbs and spices to her gluten free breadcrumbs before coating the chicken with them – making them even more delicious! She then uses her air-fryer to create that fried nugget flavour, with less oil and faff than traditional frying! If you don’t have an air fryer she also has instructions for how to bake these in the oven.

Lovely round up Eb! I love making chicken nuggets and make them in my air fryer like Balvinder and in the oven. Even though I make them a lot Master Spice refuses to eat them because they are not quite the same as the ones from a packet! Luckily Little Miss Spice prefers the homemade ones though x

Hahaha – what is it with kids preferring the less healthy, bought versions? My daughter doesn’t like my (lovingly made, homecooked, from scratch, using good quality ingredients) macaroni cheese, but says she really likes school’s (mass produced, down to a price) macaroni cheese – go figure! Eb x

Poor girl, having to wear a cast for weeks and not being able to scratch her arm! My youngest son has also injured himself recently – his leg and knee – so I know how painful these things are. Thank you for featuring my chicken nuggets! And I am kicking myself for not posting this recipe in November! Never occurred to me there actually was a chicken nugget day. Will be back later on this week with a new recipe.

Yeah, very annoying, though I think all the worst thing is all the stuff she’s missing out on… sports day, all her clubs – like dance and gymnastics, various parties etc. That and not being able to bend her elbow… that would annoy me! Still, we went to fracture clinic yesterday and it’s coming off in 4 weeks – just in time for the start of the summer hols – yay! Eb x

I know – and in fact just after I’d put this post to bed, a fourth one got linked up! Such a freaky coincidence!! Thanks – yes it has been quite a whirlwind – thanks for the happy thoughts – just been to sports day… my poor sporty little girl had to just sit there and watch… luckily she goes to a lovely school and the teachers found plenty of helpful jobs for her to do – she spent much of the day with a clipboard in hand…and at one point was given the job of taking photos on the headteacher’s ipad – which I think made her feel a lot better about the day!
