Ingredients
1tablespoonolive oil
8thick pork sausages(I like Tesco Finest)
2red onionssliced
2red pepperssliced
3clovesgarliccrushed or grated
400gtin chopped tomatoes
400gtin haricot beansdrained
400mlchicken stock(made from a cube – I use Kallo Organic)
1teaspoondried mixed herbs(or Italian mixed herbs or Herbes de Provence)
To serve:
Mashed potatoes, white rice or crusty bread
Green veg such as greens, broccoli, green beans or peas
Heat the olive oil in a wide, reasonably deep, pan for 1 minute. Add the sausages and fry over a medium-high heat for 5 minutes or until brown on most sides. Stir occasionally so the sausages get brown all over.
Remove the sausages to a plate and add the sliced onions and peppers to the pan. Turn the heat down, cover with a lid and cook gently for 3-5 minutes until softened and just starting to go brown, stirring occasionally.
Add the garlic and fry for 1 minute over a gentle heat with the lid off.
Add the tomatoes, haricot beans, chicken stock and mixed herbs. Add the sausages back into the casserole, then turn the heat up and bring to the boil.
Reduce the heat so the casserole is simmering gently and cook for 15 minutes with the lid off until the sauce has thickened and reduced a little and the sausages are cooked all the way through
Serve with your choice of mashed potatoes, white rice or crusty white bread and some green veg.
