How was your Christmas? I hope it was wonderful and I especially hope your Christmas Dinner was fabulous!! But let me guess…you now have a fridge groaning with leftovers? Don’t worry, I am here to help! Here are Eight Fabulously Easy Peasy Boxing Day Leftovers Ideas 🙂
Packed with fruit, nuts and spices, this lovely Moroccan Filo Turkey Pie is a great way of turning that sad box of turkey leftovers into something truly sensational. Full of wow factor this pie is perfect for taking to a Boxing Day buffet.
These fun and super tasty Turkey, Sweet Potato and Black Bean Tacos are another great way of turning your leftover turkey into something rather exciting. Load up your tacos with spicy turkey, black beans, sweetcorn and smoky sweet potato wedges, top with zingy feta, a scattering of coriander and a squeeze of lime juice and get those tastebuds tingling!
Or why not whizz the turkey up in the food processor, add in some sage, onion, feta and leftover cranberry sauce and roll it all up in some ready made puff pastry to create these cute mini sausage rolls. Great for a Boxing Day party!
Or perhaps it’s ham you have leftover? This simple dish pairs leftover ham with roasted butternut squash, a pack of pre cooked lentils and a bag of salad leaves, plus the most delicious balsamic, honey and mustard dressing, to create a very easy yet totally scrumptious Leftover Ham, Squash and Puy Lentil Salad.
Alternatively you could turn your leftover ham into this creamy, cheesy Ham, Pea and Sprout Risotto. Great if you also have a whole pile of leftover sprouts!
Or maybe it’s leftover cranberries your fridge is bursting with. Why not turn them into these delicious vegan, dairy free and gluten free Cranberry, Cinnamon and Pecan Porridge Squares. Squidgier than normal flapjack and with much less sugar (just a touch of maple syrup) these bars are insanely moreish and a great quick and easy snack of breakfast!
Alternatively you could turn your leftover cranberries into this wonderful spicy Cranberry and Plum Compote to use on top of my delicious cinnamon and almond milk porridge or some thick and creamy Greek yogurt. Two very healthy options after a day (week? month?) of indulgence!
And let’s not forget the mincemeat…there always seems to be half a jar of leftover mincemeat after Christmas and no one wants to start making yet more mince pies! So why not turn that sad little jar into a wonderfully decadent dessert of Baked Apples with Mincemeat, Maple Syrup and Brandy Butter? As a little bonus this will have your house smelling gorgeous!
